Biscuit Topped Turkey Pot Pie

This turkey pot pie with a biscuit topping is a quick and easy recipe that you can throw together using leftovers. I used the leftovers from the roasted turkey, carrots, and potatoes that I made recently and then added canned vegetables to make it more hearty.

Pot pie is one of my all-time favorite foods and the hubs usually loves it with a homemade top and bottom crust. Since I was sent this new Viking 6.4 Qt. Casserole pan for a review, I wanted to try something different and so I topped the pot pie with a can of biscuits we just happened to have in the fridge. This is a very large pan so I could have probably used two cans instead but I ended up cutting all but three of the biscuits in half so they covered the entire pan full of deliciousness.

The casserole pan is heavy-duty and commercial grade for home use. It made this recipe easy since I was able to warm the turkey and vegetables up in it on the stove, add the biscuits on top, then slide the entire casserole pan into the oven. One pot meal = fewer dishes!

5-Ply construction makes this pan so versatile. Fry, saute, bake, anything you can think of can be done in this pan. Biscuit Topped Turkey Pot Pie

Since these were leftovers that I used, I do not have exact measurements.

  • 4 C chopped, cooked turkey + drippings
  • 2 C each cooked, chunked potatoes and carrots
  • 1 C leftover turkey gravy
  • 2 cans mixed vegetables
  • 1 can of biscuits
  1. Preheat oven according to directions on the biscuits.
  2. Mix everything together in the pan, except biscuits, until warmed through on the stovetop.
  3. Add the can of biscuits on top. I had to cut mine in half, except the three in the middle, so they would cover everything.
  4. Bake in the oven according to biscuit directions or until the tops are golden brown.
  5. Enjoy!

This casserole pan will come in very handy for us since we love to make casseroles but never have a large enough dish. When I do make them, I usually have to use two small dishes and I hate that. I fried 5 chicken breasts in this pan the other day and they came out great! Another problem fixed since I had to use two pans normally. Fewer dishes! Not to mention, the satin finish makes it look great for serving guests.

  • I could think of lots of ways of using this pan/casserole. I tend to try to make one pot meals so there is less clean-up (hey it’s only me and my cat here) That Turkey Potted Pie looks and sounds not only easy–but delicious.

  • This looks delicious! I am totally going to try this recipe but with frozen vegetables instead of canned. They put way to much sodium in canned vegetables. Thanks for sharing this… I LOVE turkey pot pie!
