Gelatin Poke Cake
If you have never tried a poke cake before, you are seriously missing out! They are so delicious and moist. Poke cakes are made by baking a cake and then poking holes in them with a fork or small straw. You then pour pudding or gelatin over the cake so it can get soaked into the holes.
I first tried a poke cake earlier this year for Easter. Someone brought it to the family dinner and I instantly fell in love. I couldn’t believe how easy it is! Kid Baker was excited to make it for us.
We just so happened to have a box of yellow cake mix and strawberry gelatin in the pantry. Hubs ran out to grab a container of whipped topping. We had a super yummy dessert to go with our 4th of July fireworks!
Gelatin Poke Cake
Ingredients
- 1 box cake mix
- 1 cup boiling water
- 1 pkg. (3 oz.) Strawberry Flavored Gelatin
- 1/2 cup cold water
- 1 tub (8 oz.) Whipped Topping, thawed
Directions
- Prepare cake mix as directed on the box and bake in a 13×9 cake pan. Let the cake cool in the pan for at least 15 minutes. Poke holes in the cake at 1/2″ intervals.
- In a small bowl, add boiling water to gelatin powder and mix until dissolved. Stir in cold water, and pour over the cake. Refrigerate for 3 hours.
- Add whipped topping to the cake, refrigerate another 1 hour.
- Serve
You can use any flavor gelatin that you like to change it up. Fresh fruit on top is another great idea.
