Lasagna Casserole

Ever go to make a meal and discover that you don’t have the right dish, pan, etc.? This happened to me yesterday when I went to make homemade lasagna.

The hubs was so excited when he brought home the ingredients for me to make my lasagna. He does the shopping so I’m always surprised with what he brings home. I’ve become super lazy when it comes to cooking anymore so I kept putting it off, until New Year’s Day. I thought I’d be nice and make the family a good home-cooked meal to start the year off.

I couldn’t find my dish to make the lasagna ANYWHERE. No clue what happened but it seemed to have disappeared and the family, especially hubs, was so disappointed. I had to improvise!

After staring at all of the ingredients nicely laid out on the counter I finally had an idea… Lasagna Casserole!

Lasagna Casserole is basically the same as regular lasagna, just mixed up instead of layered. I broke the noodles into smaller pieces, made the meat/sauce/cheese mixture, and mixed it up. I topped it off with some shredded cheese and popped it in the oven for about 5 minutes to melt it. It was a big hit!!

To make cleanup even easier, I used my trusty Viking Casserole Pan. I am able to brown the meat then add the rest of the ingredients after draining it and pop it in the oven to melt the cheese.

This is a large meal and can easily be split in half. This fed 5 of us with a little leftover. And yes, we all pigged out!

Lasagna Casserole

Ingredients

  • 2 lb hamburger
  • 1 lb lasagna noodles
  • 24 oz cottage cheese
  • 24 oz spaghetti sauce
  • 8 oz shredded cheese
  • salt, pepper, garlic powder to taste


Instructions

  1. Brown hamburger; Season with salt, pepper, garlic powder to taste; Drain
  2. Break lasagna noodles; Boil until done
  3. Mix together cottage cheese & spaghetti sauce with hamburger
  4. Add drained noodles to meat mixture; mix together
  5. Add shredded cheese on top
  6. Bake 350 for 5 min or until cheese is melted

Notes
