Perfect Spicy and Southern Pickles Recipe

I love pickles but I’ve never made my own. It’s something I’ve always wanted to do and now I have a recipe to share with you all! This is for the Perfect Spicy and Southern Pickles!

Below is a pickle recipe you will relish from Ocean Catering‘s Chef Shane.

Perfect Spicy and Southern Pickles Recipe

Ingredients

  • Approx. 40 Pickling Cucumbers cut in spears and soaked in water overnight
  • 1Gal water
  • 6 cups cider vinegar
  • 6 cups white vinegar
  • 1 cup pickling salt
  • 1/2 cup sugar
  • 3 yellow onions chunked
  • 36 cloves fresh garlic
  • 12 bay leaves
  • 1/4 cup mustard seed
  • 1/2 cup black peppercorns
  • 24 South Indian round chili
  • 1 fresh dill

Instructions

  1. Bring water, vinegars, salt, and sugar to a boil to dissolve. Let cool
  2. Wash Mason jars in the dishwasher (or by hand) and let dry
  3. Layer spices and garnish in mason jars
  4. Strain water from cucumbers and place them in the bucket
  5. Pour hot liquid over cucumbers leaving a 1/4 inch of space at the top of the jar.
  6. Cover with lid and tighten the band.
  7. Line a large stock pot with mason jars. Fill with water until over the top of jars and bring to a boil. Let boil for 8-10 minutes and turn off the heat. The jars should come down to room temperature naturally.
  8. Remove jars from the water and let cool.
  9. Wait for 2-3 weeks and enjoy. Pickles can be stored unrefrigerated on the pantry shelf until opened.

Notes: This recipe will fill up 12 1-quart mason jars

    I will have to try these! I made Cinnamon Pickles last year (more like a red hot cinnamon candy pickle). Thanks for sharing.

    There’s nothing like Homemade Pickles.. there’s a special crunch to them that’s hard to replicate. Thanks for this wonderful recipe I can’t wait to try it out.
